Marinated meats deserve a spot on the National Mall and special recognition before NFL games. That ties in two current news cycle controversies (a quarterback sitting during the national anthem, and a presidential candidate inadvertently proposing the greatest policy position ever by suggesting taco trucks on every corner), and in doing so, shows the universality of marinated meat. And there’s no better of the ilk, for our money, than adobada—pork left to soak up some combination of red chile, fruit juice and spices.
The take on adobada at La Tiendita is slightly sweet and spicy, with a thick rub of spice and extra tender meat. What makes it exceptional is the addition of warm spices like cinnamon, and what could be the phantom associations of nutmeg and clove. It’s almost like the meat is marinated in horchata.
The tostada is piled high, with abundant meat, fresh lettuce and tomato, cheese, sour cream and guacamole. Here’s to hoping these show up on every corner.
